1 package Instant ramen
1 to 2 thin slices Spam (25% less sodium preferred)
Luxury Soup Option:
2 cups chicken broth
2 green onions, chopped and separated
2 teaspoons soy sauce
1/4 teaspoon sugar
Easy & Hearty Soup Option:
2 cups water (or as directed by ramen package)
Seasoning packet from your instant ramen
Topping Options:
1 egg
Toasted sesame oil (optional)
Homemade chili oil (highly recommended)
Chopped green onions for garnish (optional)


Instructions

Make Soup Base:
Option 1: Combine chicken broth, white part of green onions, soy sauce, and sugar in a small pot. Heat over medium-high until boiling, then reduce to simmer.
Option 2: Bring water to a boil, add half the ramen seasoning packet, reduce to simmer.
Prepare Toppings:
In a small nonstick skillet, cook sliced Spam over medium-high heat until golden brown on both sides. Transfer to a plate.
In the same skillet, add the egg, cover, and cook over medium-low to your desired doneness. Transfer to plate with Spam.
Assemble:
Return soup base to medium-high heat until boiling. Cook ramen as per instructions. Adjust seasoning with more salt or seasoning powder if needed.
Serve by placing ramen and broth in a bowl, topped with Spam, egg, drizzles of sesame and chili oil, and garnished with green onions.
