15-Minute Strawberry Spinach Salad

  • Author: Dulcia
  • Total Time: 15 minutes
  • Yield: 4 1x

Description

This 15-Minute Strawberry Spinach Salad is a fresh and flavorful dish that’s perfect for a quick meal or a light side dish. The combination of sweet, juicy strawberries, tangy feta cheese, and crunchy toasted pecans creates a delightful balance of flavors and textures. The homemade balsamic glaze adds a rich, tangy-sweet finish that ties all the elements together beautifully.

Ingredients

Scale

For the Balsamic Dressing:
1 cup balsamic vinegar
¼ cup honey or brown sugar
For the Spinach Strawberry Salad:
10 oz fresh baby spinach
3 cups strawberries, cleaned, hulled, and sliced
1 cup blueberries
⅓ cup feta cheese, crumbled
1 cup pecans, toasted (some chopped, some whole)

Instructions

1. Make the Balsamic Glaze:
In a small saucepan, heat the balsamic vinegar and honey over medium heat.
Bring the mixture to a gentle boil, then reduce the heat to a simmer. Cook, stirring occasionally, until the mixture thickens and reduces by about half, approximately 10 minutes.
Remove from heat and pour the balsamic glaze into a heat-proof bowl to cool. The glaze will thicken as it cools. The consistency should be thick enough to coat the back of a spoon, but not overly thick.
2. Assemble the Salad:
In a large bowl, combine the fresh baby spinach, sliced strawberries, blueberries, and crumbled feta cheese. Toss gently to combine.
Divide the salad into individual serving bowls.
Top each serving bowl with whole and chopped toasted pecans.
Drizzle the balsamic glaze over the top of each salad bowl just before serving.
