These 3-Ingredient Homemade Twix Bites are the perfect solution for when you’re craving something sweet and indulgent but don’t have much time to bake. With just a few simple ingredients—mini Nilla Wafer cookies, Rolos, and melted chocolate—you can create a treat that tastes just like the classic candy bar but in a bite-sized, easy-to-make form.
Ingredients
72 mini Nilla Wafer cookies (regular size can also be used)
1 (7-ounce) bag of Rolos, unwrapped
8 ounces chocolate chips or melting chocolate wafers
1 teaspoon coconut oil (optional, for melting with chocolate chips)
Instructions
Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
Arrange 36 mini Nilla Wafer cookies on the prepared baking sheet. Place one unwrapped Rolo candy on the center of each cookie.
Heat in the preheated oven for 90 seconds, just until the Rolos are soft but not fully melted.
Remove from the oven and gently place another mini Nilla Wafer on top of each Rolo, pressing down slightly (without flattening the Rolo).
Chill the cookie sandwiches in the refrigerator for 15-20 minutes until the chocolate has set.
While the cookies chill, melt the chocolate in a double boiler or microwave. If using chocolate chips, you may add 1 teaspoon of coconut oil for smoother consistency.
Dip each cookie sandwich into the melted chocolate using a fork or chocolate dipper. Tap the fork gently against the bowl to remove any excess chocolate, then place the dipped cookies back onto the parchment-lined baking sheet.
Refrigerate the cookies again until the chocolate coating has fully hardened. Enjoy!
