Layer the potatoes and onions in small stacks and place them upright in a greased 2.5 to 3-quart casserole dish.

Add the dry mustard, milk, salt, and pepper. Continue to whisk over medium heat until the mixture is thick and bubbly.

Remove from heat and stir in the shredded cheddar and gruyere cheeses until melted.
