Ingredients:

Beef and Marinade:

  • 200 g Beef steak (choices include flank, sirloin, or rib-eye)
  • 2 tsp Light soy sauce
  • 2 tsp Corn starch
  • 2 tsp Cooking oil (such as vegetable, sunflower, or canola)

Noodles and Vegetables:

  • 100-120 g Dried rice noodles (10mm wide)
  • 3-4 stalks Choy sum (or substitute with Chinese broccoli or bok choy)
  • 2 Eggs
  • Salt to taste
  • 3-4 cloves Garlic, minced

Pad See Ew Sauce:

  • 3 tbsp Oyster sauce
  • 1 tbsp Light soy sauce
  • 1 tbsp Dark soy sauce
  • 1 tbsp Fish sauce
  • 1 tsp Sugar

Directions:

  1. Prep the Noodles: Begin by soaking the dried rice noodles in hot water for about 15 minutes. Once softened, drain and rinse them under cold water to stop the cooking process.
  2. Marinate the Beef: Thinly slice your beef against the grain. Marinate it with light soy sauce, corn starch, and cooking oil for 10-15 minutes to enhance its flavor and tenderness.
  3. Prepare the Sauce: In a small bowl, combine the oyster sauce, light and dark soy sauces, fish sauce, and sugar. Stir until the sugar is completely dissolved.
  4. Cook the Eggs: Heat a tablespoon of oil in a large wok or pan over medium-high heat. Scramble the eggs until just set, then remove them and set aside.
  5. Sear the Beef: Using the same wok, increase the heat to high and add three tablespoons of oil. Add the marinated beef and sear it for 2-3 minutes on one side, then flip and cook for another 1-2 minutes.
  6. Sauté the Vegetables: Add the minced garlic and the stems of the choy sum to the wok, stirring until fragrant. Introduce the leaves of the choy sum to the mix.
  7. Combine Everything: Add the prepped noodles and the sauce mixture to the wok. Stir fry vigorously until the noodles are well-coated with the sauce and have taken on a glossy appearance.
  8. Final Touch: Return the scrambled eggs to the wok, toss everything together to distribute the ingredients evenly, and serve hot.
