Grilled Mango Chicken

Grilled Mango Chicken: A Tropical Twist on a Classic Favorite

Summer is the perfect time to spice up your grilling routine, and what better way to do so than by adding a touch of tropical flair? My latest culinary experiment, Grilled Mango Chicken, infuses traditional grilled chicken with the sweet and tangy flavors of mango, creating a dish that’s as vibrant in taste as it is in appearance.

Ingredients

  • 2 lb. chicken thighs, boneless and skinless
  • ½ cup soy sauce
  • 2 mangos, peeled and pitted
  • 3 garlic cloves
  • ½ teaspoon fresh ginger, grated
  • 2 tablespoons water (add more if needed)
  • Cilantro, for garnish

Directions

  1. Prepare the Chicken: Place the chicken thighs in a plastic bag or a large baking dish and set aside.
  2. Make the Marinade: Combine the soy sauce, mangos, garlic, ginger, and water in a blender or food processor. Pulse until the mixture is smooth.
  3. Marinate the Chicken: Reserve ¼ cup of the marinade for later use. Pour the remaining marinade over the chicken, ensuring each piece is well-coated. Seal the bag or cover the dish, and refrigerate for at least 2 hours, or up to 8 hours to intensify the flavors.
  4. Grill the Chicken: Preheat your grill to 400°F (204°C). Remove the chicken from the marinade, shaking off any excess. Grill the chicken thighs for about 6-7 minutes on each side, or until fully cooked and nicely charred.
  5. Serve: Transfer the grilled chicken to a serving platter. Brush it with the reserved marinade and sprinkle chopped cilantro over the top for a fresh, herby finish.
