  • 80 grams salted butter, softened
  • 60 grams cane sugar
  • 1 to 2 tablespoons cinnamon (to taste)
  • 1 egg for brushing

Directions

  1. Prepare the Brioche Dough: Combine all brioche dough ingredients in a mixer. Knead on low speed for about 15-20 minutes until the dough forms a ball and pulls away from the sides of the bowl. Cover the bowl with a towel or plastic wrap, and let it rise in a warm place (around 28°C), like a slightly humid bathroom or an oven with a proofing setting, until doubled in size, approximately 1.5 hours.
  2. Cook the Apples: Peel and dice the apples. Cook them in a skillet over medium-high heat with butter, sugar, and honey until soft, about 15 minutes. Let the apples cool completely.
  3. Prepare the Rolls: After the dough has risen, punch it down and roll it out into a 25×40 cm rectangle. Whisk the soft butter with sugar and cinnamon for the filling, and spread it over the dough. Evenly distribute the cooled apple pieces over the filling. Roll the dough tightly into a log and slice into rolls about 5 cm thick.
  4. Second Rising: Place the rolls in a lightly buttered dish, spacing them apart. Allow them to rise again in a warm place for about 30 minutes.
  5. Bake the Rolls: Brush the rolls with beaten egg and bake at 160°C in a conventional oven for about 25 minutes, or until golden brown.
