This recipe combines the earthy depth of roasted garlic with the aromatic freshness of thyme, all blended into creamy mashed potatoes. It’s perfect for elevating a simple weeknight dinner or for impressing guests at your next gathering.

Ingredients

For the Roasted Garlic:

  • 2 heads of garlic
  • 1 tablespoon of olive oil (for roasting)
  • 3 tablespoons of olive oil (for serving)

For the Mashed Potatoes:

  • 3 pounds Russet or Golden Yukon potatoes, peeled and quartered
  • 1.5 cups heavy cream
  • 1 cup shredded Parmesan cheese
  • 4 tablespoons salted butter
  • ¼ teaspoon salt
  • 3 tablespoons fresh thyme
  • Freshly ground black pepper to taste

Directions

Roasting the Garlic:

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the Garlic: Slice off the top portion of the garlic heads, discard any loose skin, and place the heads on a piece of foil.
  3. Drizzle and Wrap: Drizzle 1 tablespoon of olive oil over the garlic, wrap it in foil, and roast in the oven for 45 minutes.
  4. Prepare for Serving: Once cool, squeeze the garlic cloves into a small bowl, mix with 3 tablespoons of olive oil, and set aside.

Making the Mashed Potatoes:

  1. Cook the Potatoes: While the garlic is roasting, place the peeled and quartered potatoes in a large pan filled with cold water, ensuring it covers the potatoes by 1-2 inches. Bring to a boil over high heat and cook for 15-20 minutes until the potatoes are tender.
  2. Drain and Mash: Drain the potatoes well and return them to the bowl to mash.
  3. Mix Ingredients: In the same pan, gently heat the heavy cream, then add back the mashed potatoes, shredded Parmesan, butter, and salt. Stir over low-medium heat for about 5 minutes until everything is beautifully combined.
  4. Season: Fold in the roasted garlic mixture, fresh thyme, and freshly ground black pepper. Adjust the seasoning with salt as needed.
