Ingredients:

  • 1 ½ pounds russet potatoes (or any starchy potatoes)
  • 3 tablespoons butter, softened
  • ⅛ teaspoon nutmeg
  • Salt & pepper to taste
  • 2 eggs, separated

Directions:

  1. Preheat your oven to 425°F. Begin by thoroughly washing the potatoes and poking the skins all over with a fork to prevent them from bursting in the oven.
  2. Bake the potatoes directly on the oven rack for about 50-60 minutes, or until they are tender inside.
  3. Cool and prepare the potatoes: Once done, let them cool enough to handle, then cut them in half and scoop out the insides into a bowl.
  4. Create the mixture: Mash the potatoes until very smooth. You can use a ricer for an even finer texture. Mix in the softened butter, nutmeg, and salt and pepper to taste. Then, stir in the egg yolks until well combined.
  5. Pipe the potatoes: Spoon the potato mixture into a piping bag fitted with a star tip. Pipe the potatoes onto a parchment-lined baking sheet, forming mounds about 2 inches wide and 1 ½ inches tall.
  6. Final touch: In a separate bowl, whisk the egg whites until slightly foamy. Gently brush this over the piped potatoes.
  7. Bake to perfection: Bake in the preheated oven for 10-15 minutes, or until they turn a lovely golden color.

1 ½ pounds russet potatoes or starchy potatoes
3 tablespoons butter, softened
⅛ teaspoon nutmeg
Salt & pepper to taste
2 eggs, separated


Instructions

Preheat oven to 425°F. Wash the outside of the potatoes and poke the skins all over with a fork. Place in the oven and bake until they are soft inside, about 50-60 minutes or until tender.
Allow the potatoes to cool and cut in half. Scoop out the middle and place in a bowl. Allow the potatoes to cool slightly.
Mash the potatoes until very smooth or use a ricer to rice the potatoes. Once smooth, add butter and seasonings to taste. Stir in egg yolks.
Place the potato mixture into a piping bag with a star tip. Pipe mounds of potatoes about 2 inches wide and 1 ½ inches tall onto a parchment-lined pan. It’s ok if the sizes vary a little bit.
Place the egg whites in a separate bowl and whisk with a fork until they’re slightly foamy. Brush the egg whites over piped potatoes very gently and bake 10-15 minutes or until golden.
