The combination of cheddar and gruyere cheeses creates a rich and flavorful gratin that’s sure to be a crowd-pleaser. Below, you’ll find all the details you need to whip up this mouthwatering dish.

Ingredients

  • 2 ½ pounds red potatoes
  • 1 onion
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 teaspoon dry mustard powder
  • 2 cups milk
  • 1 cup cheddar cheese, shredded
  • ½ cup gruyere cheese, shredded
  • Salt and pepper to taste

Directions

  1. Preheat and Prepare: Start by preheating your oven to 400°F (200°C). While the oven heats, wash your potatoes thoroughly and slice them into thin pieces, approximately ⅛” thick. Do the same with the onion, ensuring it’s sliced as thinly as possible.
  2. Layer: In a greased 2.5 to 3-quart casserole dish, arrange the potato and onion slices in little stacks. Place these stacks upright for a beautiful presentation and even cooking.
  3. Make Cheese Sauce: In a medium saucepan, melt the butter over medium heat. Add the flour and cook for 2-3 minutes, stirring constantly, until the mixture starts to get a golden color. Mix in the dry mustard powder followed by the milk, salt, and pepper. Continue to whisk the mixture until it becomes thick and bubbly. Take the saucepan off the heat and stir in the shredded cheddar and gruyere cheeses until they melt completely.
  4. Bake: Pour the cheese sauce evenly over the layered potatoes and onions. Cover the casserole dish with foil (spray the underside of the foil with cooking spray to prevent sticking). Bake covered for 60 minutes. Afterward, remove the foil and continue to bake for an additional 20-30 minutes, or until the top is lightly browned and the potatoes are tender.
  5. Cool and Serve: Allow the dish to cool for about 15 minutes before serving. This rest period helps the layers set, making it easier to serve.
