Ingredients:

  • 1 cup Mini Tapioca Pearls
  • 6 cups Water
  • 2 Fresh Mangoes (Australian Mango 2, Regular Mango 3)
  • ½ cup Condensed Milk
  • 1 cup Full Fat Coconut Milk

Directions:

  1. Cook Tapioca Pearls: In a pot, combine 1 cup of tapioca pearls with 6 cups of water. Set the heat to medium-low and cook for approximately 10 minutes, stirring constantly to prevent sticking. Once cooked, cover the pot, turn off the heat, and allow the pearls to sit for an additional 3 minutes.
  2. Drain and Rinse: Drain the tapioca pearls and rinse them under cold water. If you’re serving the dessert immediately, set the pearls aside. Otherwise, leave them soaking in cold water until you’re ready to assemble the dessert.
  3. Prepare Mango Puree: Cut the fresh mangoes into cubes. Take half of the mango cubes and add them to a blender. Pour in the condensed milk and coconut milk. Blend the mixture until smooth and creamy.
  4. Combine Ingredients: Once the mango mixture is smooth, gently fold in the drained tapioca pearls. Ensure that the pearls are evenly coated with the mango-coconut mixture.
  5. Serve: Divide the Mango Sago into individual serving bowls. Top each serving with additional fresh mango chunks for an extra burst of flavor and visual appeal.
