Ingredients:

  • 1 cinnamon stick
  • ½ vanilla pod, sliced lengthwise
  • 2cm piece of ginger, peeled and sliced
  • 6 cardamom pods
  • 6 cloves
  • 1 tsp black peppercorns
  • 2 tea bags, preferably Darjeeling
  • 40g coconut palm sugar
  • 500ml hazelnut milk

Directions:

  1. Spice Infusion: Start by adding 500ml of water to a saucepan. Toss in the cinnamon stick, sliced vanilla pod, ginger, cardamom pods, cloves, and black peppercorns. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes, uncovered. This process allows the spices to fully release their flavors.
  2. Tea Steeping: After simmering, remove the saucepan from the heat and add the tea bags. Let them steep for 3 minutes. This time is perfect for Darjeeling to impart its delicate yet profound flavors without becoming bitter.
  3. Sweetening the Mix: Remove the tea bags and stir in the coconut palm sugar. Continue stirring until the sugar is completely dissolved. This step infuses the brew with a mild, natural sweetness that complements the spices beautifully.
  4. Chilling: Strain the mixture to remove all solid spices and let it chill in the refrigerator until cool. This can take about 1-2 hours, so plan accordingly.
  5. Serving: When ready to serve, mix the chilled spiced tea with the hazelnut milk. Pour over ice in tall glasses and enjoy immediately. The hazelnut milk adds a creamy texture and nutty flavor that rounds out the drink wonderfully.

Ingredients

1 cinnamon stick
½ vanilla pod, sliced lengthwise
2cm ginger, peeled and sliced
6 cardamom pods
6 cloves
1 tsp black peppercorns
2 tea bags, preferably Darjeeling
40g coconut palm sugar
500ml hazelnut milk


Instructions

Add 500ml of water, the cinnamon, vanilla, ginger, cardamom, cloves, and peppercorns to a saucepan and bring to the boil. Reduce the heat and simmer for 10 minutes, uncovered.
Remove from the heat, add the tea bags, and let them steep for 3 minutes. Remove the tea bags and stir in the coconut sugar. Once the coconut sugar has dissolved, strain out the spices and chill until cool.
When ready to serve, mix in the hazelnut milk. Serve with ice.
