This coleslaw is not only visually striking with its bold colors but also offers a delightful mix of textures and flavors that are sure to complement any meal, especially during the summer.

Ingredients

  • 1/2 medium head red cabbage, finely shredded
  • 1 medium to large carrot
  • 1/4 large red onion, thinly sliced
  • 1 red capsicum, sliced into thin, short strips
  • 1 red apple, cut into small cubes or strips
  • 1 cup shredded Parmesan, loosely packed (opt for better quality for a richer flavor)
  • 1 cup mayonnaise
  • 1/3 cup yoghurt
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Directions

  1. Prepare the Vegetables:
    • Begin by cutting the red cabbage into three wedges. Remove the firm core from each wedge.
    • Shred each cabbage wedge into thin strips. If you find some strips too long, feel free to cut them in half for easier eating.
  2. Combine Ingredients:
    • In a large bowl, add the shredded cabbage.
    • Shred the carrot and slice the red onion, red capsicum, and apple into your desired shapes and sizes. Add these to the bowl with the cabbage.
    • Toss in the shredded Parmesan cheese.
  3. Mix the Dressing:
    • To the bowl, add the mayonnaise, yoghurt, Dijon mustard, salt, and pepper.
    • Combine everything well using a spoon or spatula initially. Then, don’t hesitate to use your hands to ensure that every piece of vegetable and apple is well-coated with the creamy dressing.
  4. Serve:
    • Garnish the coleslaw with fresh dill or another herb of your choice for an extra touch of freshness and flavor.
