Ingredients:

  • 1 1/2 tablespoons avocado oil
  • 1 pound chicken breast, thinly sliced
  • 2 heads broccoli, florets removed (7 cups/465 grams)
  • 1/2 cup chicken broth
  • 1/2 cup coconut aminos
  • 3 tablespoons lime juice
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, minced
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper, to taste
  • Optional toppings: sesame seeds, green onions
  • For serving: white rice, cauliflower rice

Directions:

  1. Prepare the Sauce: In a small saucepan, combine the chicken broth, coconut aminos, lime juice, sesame oil, minced garlic, minced ginger, red pepper flakes, and a pinch of pepper. Simmer over medium-low heat for about 20 minutes, stirring often, until the sauce thickens and reduces by two-thirds.
  2. Cook the Chicken: Season the thinly sliced chicken breast with salt and pepper. In a large sauté pan over medium heat, heat the avocado oil. Add the chicken slices and cook for 30-60 seconds per side in batches to avoid overcrowding the pan.
  3. Cook the Broccoli: Once the chicken is cooked, add the broccoli florets to the same pan with the chicken juices. Cook for 3-5 minutes until the broccoli is tender. If needed, add a splash of chicken broth to help with the cooking.
  4. Combine and Heat Through: Return the cooked chicken to the pan with the broccoli. Pour the reduced sauce over the mixture and stir well to coat everything evenly. Cook for an additional 2-3 minutes until everything is heated through and well combined.
  5. Serve: Serve the Chicken and Broccoli Salad topped with optional sesame seeds and green onions. Pair it with your choice of white rice or cauliflower rice for a complete meal.
