Packed with a flavorful filling of shredded chicken, cheese, and a medley of vegetables, they’re baked to perfection for a healthier twist on a classic fried dish.

Ingredients:

  • 18 corn tortillas
  • 2 ½ cups shredded chicken
  • 1 ½ cup shredded cheese (Asadero, Oaxaca, or any Mexican blend)
  • 1 small red bell pepper, diced
  • 1 small green bell pepper, diced
  • 1 small white onion, diced
  • 1 large tomato, diced
  • ½ cup chicken stock
  • 2 tbsp vegetable oil (and more for baking)
  • Chili powder and garlic powder (to taste)
  • Salt and pepper (to taste)

Directions:

Make the Filling:

  1. Sauté the Vegetables:
Begin by heating 2 tablespoons of vegetable oil in a medium pan over medium heat. Once the oil is hot, add the diced red and green bell peppers. Sauté for about 3 minutes.
  2. Cook the Onions and Chicken:
Add the diced white onion to the pan and cook for an additional 3 minutes, or until the onions become translucent. Stir in the shredded chicken and diced tomato, mixing well to combine.
  3. Season and Simmer:
Pour in ½ cup of chicken stock, and season the mixture with garlic powder, chili powder, salt, and pepper to taste. Continue to cook, stirring constantly, until all the juices have evaporated and the vegetables are cooked through.
  4. Cool and Combine with Cheese:
Transfer the mixture to a bowl and allow it to cool slightly. Once cooled, add the shredded cheese and mix well to combine. Set the filling aside.

Assemble the Taquitos:

  1. Prepare the Tortillas:
If you’re using corn tortillas, heat them up between damp paper towels in the microwave for 20-30 seconds. This will make them more pliable for rolling. If you’re using flour tortillas, you can skip this step.
  2. Fill and Roll:
Place two or three tablespoons of the chicken and cheese mixture in the center of each tortilla. Roll the tortilla tightly around the filling and place the taquito seam-side down on a plate. Repeat with the remaining tortillas and filling.

Bake:

  1. Prepare for Baking:
Brush each taquito with a bit of oil on all sides or use a cooking spray. Lightly oil a baking tray and arrange the taquitos in a single layer.
  2. Bake:
Preheat your oven to 400°F (200°C). Bake the taquitos for 10-15 minutes, turning them once during baking, until they are golden and crispy on all sides.

Serve:

These taquitos are delicious served with a variety of salsas on the side, or you can get creative with toppings like guacamole, sour cream, or a sprinkle of fresh cilantro. Whether you’re enjoying them as a snack or a meal, they’re sure to satisfy!
