Ingredients

  • Spaghetti: 8 ounces, uncooked
  • Shrimp: 1 pound, uncooked, peeled (31-40 per pound size), thawed
  • Olive Oil: 1 tablespoon
  • Butter: 2 tablespoons
  • Garlic: 4 cloves, minced
  • Grape Tomatoes: 10 ounces, cut into halves
  • Chicken Broth: 1/4 cup
  • Italian Seasoning: 1/4 teaspoon
  • Baby Spinach: 2 cups (packed), fresh
  • Salt & Pepper: to taste

Directions

  1. Cook Pasta: Start by boiling a salted pot of water. Cook the spaghetti al dente according to the package directions.
  2. Sauté Garlic: In a skillet, heat the olive oil and butter over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add Tomatoes and Seasonings: Stir in the halved grape tomatoes, chicken broth, and Italian seasoning. Let them cook for about 5 minutes, or until the tomatoes begin to soften and lose their shape.
  4. Cook Shrimp and Spinach: Add the shrimp to the skillet, followed by the spinach. Reduce the heat to medium and continue to cook for about 5 minutes, until the shrimp are cooked through and the spinach has wilted.
  5. Combine and Season: Season the sauce with salt and pepper to taste. Drain the spaghetti and toss it with the shrimp and tomato mixture. For a saucier pasta, add a splash of the reserved hot pasta water.
  6. Serve: Dish up the pasta immediately, perhaps with a sprinkle of Parmesan cheese or a garnish of fresh herbs if desired.

1/4 teaspoon Italian seasoning
2 cups (packed) fresh baby spinach
Salt & pepper, to taste
