Ingredients:

  • Sweet Potato Base:
    • 3 large sweet potatoes, peeled and sliced into 1/2 inch slices
    • 4 tablespoons maple syrup, divided
  • Candied Pecans:
    • 1 cup pecans, finely chopped
    • 1/2 cup light brown sugar, divided
    • 1/4 cup granulated sugar
    • 2 teaspoons cinnamon, divided
    • 1 tablespoon egg whites
    • 1/4 teaspoon water
    • 1 teaspoon pure vanilla extract, divided
  • Cream Cheese Topping:
    • 8 ounces cream cheese, room temperature
    • 1/4 cup light brown sugar
    • 1/2 teaspoon cinnamon
    • 1/2 teaspoon pure vanilla extract

Directions:

  1. Prepare the Candied Pecans:
    • Preheat your oven to 300°F (150°C). In a small bowl, mix together 1/4 cup of light brown sugar, 1/4 cup of granulated sugar, and 1 1/2 teaspoons of cinnamon. Set this aside.
    • In a larger bowl, whisk together the egg whites, 1/4 teaspoon water, and 1/2 teaspoon of vanilla extract until frothy. Add the chopped pecans to the bowl and stir until they are well coated. Then, add the sugar mixture and stir until the pecans are evenly coated.
    • Spread the pecans on a parchment-lined baking sheet and bake for 15 minutes. Stir the pecans and return them to the oven for another 15 minutes, or until the coating hardens. Remove from the oven and let them cool.
  2. Bake the Sweet Potatoes:
    • Increase the oven temperature to 400°F (200°C). Place the sweet potato slices in a large bowl or bag and coat them with 2 tablespoons of maple syrup.
    • Arrange the slices in a single layer on a parchment-lined baking sheet and bake for 10 minutes. Remove the baking sheet from the oven, brush the tops of the sweet potato slices with more maple syrup, flip them over, and brush the other side. Return the sweet potatoes to the oven and bake for an additional 15 minutes, or until they are tender.
  3. Prepare the Cream Cheese Topping:
    • In a medium bowl, beat the room temperature cream cheese until smooth. Add the remaining 1/4 cup of light brown sugar, 1/2 teaspoon of cinnamon, and 1/2 teaspoon of vanilla extract. Beat the mixture until it is fully combined and smooth.
  4. Assemble the Sweet Potato Pie Bites:
    • Once the sweet potato slices have cooled, spoon or pipe the cream cheese mixture onto the center of each slice.
    • Stir 1 teaspoon of maple syrup into 1 cup of the candied pecans, then sprinkle them generously over the cream cheese topping on each sweet potato slice.
    • Serve and enjoy!
