Cottage Cheese Fettuccine Alfredo

Cottage Cheese Fettuccine Alfredo

If you’re craving a creamy, indulgent pasta dish that’s also light on calories, this Cottage Cheese Fettuccine Alfredo is the perfect solution. With a silky, flavorful sauce made from cottage cheese and a touch of parmesan, this dish offers all the comfort of traditional Alfredo with a fraction of the guilt. Plus, it’s incredibly easy to make!

Ingredients:

  • 10 oz fettuccine pasta (or pasta of choice)
  • 1 cup cottage cheese (I use nonfat, but 2% or 4% works too)
  • 1 tablespoon butter
  • 3 garlic cloves, minced
  • 1/4 cup parmesan cheese, grated
  • 1/2 teaspoon ground black pepper
  • 1/2 cup milk, chilled (I use unsweetened almond milk)
  • Salt to taste
  • Grated parmesan to garnish
  • Fresh parsley to garnish

Directions:

  1. Cook the Pasta:
Begin by cooking the fettuccine pasta to al dente according to the package directions. Don’t forget to add salt to the boiling water for flavor!
  2. Prepare the Sauce:
Add the cottage cheese to a medium bowl. In a separate small bowl, combine the minced garlic and butter, and gently microwave for about 30-45 seconds. Heat the garlic and butter for an extra 30 seconds, until the butter is fully melted and bubbly. If you prefer, you can sauté the garlic in butter in a pan, but microwaving saves on dishes.
  3. Blend the Alfredo Sauce:
Transfer the cottage cheese, garlic and butter mixture, grated parmesan, milk, and ground black pepper to a blender. Blend for 1-2 minutes until the sauce is perfectly smooth.
  4. Season to Taste:
Taste the Cottage Cheese Alfredo sauce and add salt if needed.
  5. Combine with Pasta:
When the pasta is cooked, drain it and allow it to sit for 5 minutes to cool slightly. Pour the Alfredo sauce over the pasta and mix well. Taste and adjust the seasoning as needed.
  6. Garnish and Serve:
Garnish the dish with extra grated parmesan and fresh parsley. Serve immediately and enjoy the creamy goodness!

Description

The Cottage Cheese Fettuccine Alfredo is a delightful, healthier twist on the classic Alfredo pasta. By using cottage cheese, you still achieve that creamy texture we all love but with a fraction of the calories. It’s a perfect dish for those who want to indulge in something rich and comforting without overloading on fat.

Ingredients

Scale

10 oz fettuccine pasta or pasta of choice
1 cup cottage cheese (I use nonfat, but 2% or 4% works too)
1 tablespoon butter
3 garlic cloves, minced
1/4 cup parmesan cheese, grated
1/2 teaspoon ground black pepper
1/2 cup milk, chilled (I use unsweetened almond milk)
Salt to taste
Grated parmesan to garnish
Fresh parsley to garnish

Instructions

Begin by cooking the fettuccine pasta to al dente, according to the package directions. Don’t forget to add salt!
Add the cottage cheese to a medium bowl, and the minced garlic and butter to a separate small bowl. Gently microwave for about 30-45 seconds. Heat the garlic and butter an extra 30 seconds, until the butter is fully melted and bubbly. You can alternatively sauté the garlic in butter in a pan (but I prefer fewer dishes).
Add the cottage cheese, garlic and butter, grated parmesan, milk, and ground black pepper to a blender and blend for 1-2 minutes until perfectly smooth.
Taste the Cottage Cheese Alfredo sauce and add salt if needed.
When the pasta is cooked, drain it and allow it to sit for 5 minutes to cool a little.
Pour the Alfredo sauce over the pasta and mix well.
Taste and adjust the seasoning.
Garnish with extra grated parmesan and fresh parsley, and enjoy!
