Ingredients:

  • 8 russet potatoes, for that perfect blend of fluffiness and crispiness.
  • 2 cups ice, a little trick to enhance the potatoes’ texture.
  • 1½ tsp garlic powder, adding that essential garlic punch.
  • 1 tsp smoked paprika, for a hint of smokiness.
  • 1 tsp kosher salt, to bring out the flavors.
  • 1 tsp black pepper, for a bit of heat.
  • ½ cup olive oil, ensuring each slice gets that golden crisp.
  • ¼ cup shredded parmesan cheese, for a delightful cheesy crust.
  • ¼ cup grated parmesan cheese, doubling down on the cheesy goodness.
  • 2 tbsp parsley, chopped, for a fresh finish.
  • 2 tbsp chives, chopped, adding a mild oniony kick.

Directions:

Follow these steps to culinary perfection:

  1. Prep the Potatoes: Start by washing and cutting the potatoes into thin round slices. Place them in a large bowl, cover with water, add the ice, and let them soak for about 30 minutes. This step ensures your potatoes will be crispy on the outside and tender on the inside.
  2. Season: After soaking, pat the potatoes dry. Then, preheat your oven to 450 degrees Fahrenheit. Combine the potato slices with garlic powder, paprika, salt, and pepper in a large zip-top bag. Shake well to coat evenly, then add olive oil and shake again.
  3. Bake: Arrange the potatoes in a single layer on a parchment-lined baking sheet and bake for 35-40 minutes. They should emerge beautifully browned and crispy.
  4. Toss with Cheeses and Herbs: Immediately after baking, toss the hot potatoes with both types of parmesan, parsley, and chives in a large bowl. This step not only adds layers of flavor but also creates an irresistible cheesy coating.
