  • Butter, for cooking and spreading
  • Sugar and cinnamon, for sprinkling
  • Optional: Whipped cream for topping

Directions:

  1. Prepare the Strawberry Syrup:
    • Make your homemade strawberry syrup ahead of time and set it aside. This will be used as a topping for your finished quesadillas.
  2. Mix the Filling:
    • In a small bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until the mixture is smooth and well combined.
  3. Prepare the Tortillas:
    • Take one tortilla and spread a thin layer of butter on one side.
    • Sprinkle a mix of sugar and cinnamon over the buttered side and set aside.
    • Spread half of the cream cheese mixture evenly over another tortilla.
  4. Assemble the Quesadilla:
    • Place the buttered and sugared tortilla, buttered side up, on top of the tortilla with the cream cheese. This creates a sweet and creamy sandwich with a crispy outer layer.
  5. Cook:
    • Heat a pan or griddle over medium heat.
    • Place the quesadilla in the pan, buttered side down. While it cooks, butter the top side and sprinkle with more cinnamon and sugar.
    • Cook until the bottom is golden brown, then carefully flip to cook the other side until it too is golden and crispy.
  6. Repeat:
    • Remove the cooked quesadilla from the pan, and repeat the process with the remaining tortillas and cream cheese mixture.
  7. Serve:
    • Once cooked, cut each quesadilla into quarters or eighths.
    • Serve warm, drizzled with the homemade strawberry syrup and a dollop of whipped cream on top if desired.
