Ingredients
For the Beef Pieces:
- 1 pound beef tenderloin (450 grams) 🥩
- ½ teaspoon salt 🧂
- ¼ teaspoon black pepper (or to taste) 🌶️
- 1 tablespoon olive oil 🫒
For the Mushroom Filling:
- 1 tablespoon olive oil 🫒
- ½ onion, minced 🧅
- 2 cups finely chopped button mushrooms (about 7 ounces/200 grams) 🍄
- 1 tablespoon regular soy sauce 🥢
- Black pepper, a generous pinch 🌶️
- 1 teaspoon dried oregano 🌿
- ½ cup pitted black olives (60 grams) 🫒
For the Beef Wellington Bites:
- 1 pound puff pastry (450 grams) 🥐
- Mustard, to taste 🌭
- 1 small egg, beaten 🥚
Instructions
- Prepare the Beef:
Begin by cutting the beef tenderloin into 1-inch pieces (2.5 centimeters). Season the beef pieces with salt and black pepper. 🧂🌶️ - Sear the Beef:
Heat the olive oil in a skillet over high heat. Brown half of the beef pieces on all sides, about 1-2 minutes max per batch. Once browned, transfer the beef to a plate lined with a paper towel. Repeat the process with the remaining beef pieces. Set aside the beef to cool slightly. 🍳 - Preheat the Oven:
Preheat your oven to 400°F (200°C). 🔥 - Make the Mushroom Filling:
In the same skillet, add a little more oil and sauté the minced onion and chopped mushrooms over medium-low heat for about 10 minutes, stirring occasionally. Add the soy sauce, black pepper, and oregano, and mix well. 🍄🧅 - Blend the Mushroom Mixture:
Transfer the sautéed mushroom mixture to a food processor. Add the pitted black olives (ensure they are stone-free). Process the mixture until it is smooth-ish in texture. 🫒🔄 - Assemble the Bites:
Unroll the puff pastry sheet and cut it into squares, roughly 3-3.5 inches (8-9 centimeters) in size. In the center of each square, spread a little mustard, followed by some of the mushroom mixture. Place a piece of seared beef on top. Fold two opposite corners of the pastry over the beef, and then fold the other two corners over. Press the corners down to seal the parcel. 🥐 - Bake:
Transfer the beef Wellington bites to a baking tray lined with parchment paper. Brush each parcel with the beaten egg. 🥚
Bake in the preheated oven at 400°F (200°C) for 10-15 minutes, or until the puff pastry is golden brown and puffed. 🕒🥐 - Serve and Enjoy:
These bites are best served warm. Pair them with your favorite dipping sauce for an extra touch of flavor. Enjoy! 😋
