For the Puffs (Choux Pastry):

  • 6 tbsp (85 grams) unsalted butter
  • 2 tsp granulated sugar
  • ½ tsp kosher salt
  • ¾ cup (95 grams) all-purpose flour
  • 3 large eggs

For the Raspberry Glaze:

  • 1 cup (120 grams) fresh raspberries
  • 2 cups (245 grams) confectioners’ sugar
  • ¾ tsp vanilla extract
  • Pinch of kosher salt

Directions:

Step 1: Prepare the Raspberry Cream

Step 2: Make the Choux Pastry

  • In a medium saucepan, bring 6 tbsp unsalted butter, 2 tsp granulated sugar, ½ tsp kosher salt, and ¾ cup water to a simmer over medium heat, stirring until the butter is melted.
  • As soon as the mixture begins to boil, add ¾ cup flour and stir constantly for about 1 minute until the dough forms a ball and pulls away from the sides of the pan.
