2 cups leftover mashed potatoes
1 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
2 tablespoons chopped chives (optional)
1/4 teaspoon garlic powder
Salt and pepper to taste
2 large eggs
1/2 cup breadcrumbs
Cooking spray or oil for greasing
Instructions
Preheat your oven to 400°F (200°C). Grease a baking sheet with cooking spray or oil.
