Garlic Sauteed Asparagus and Mushrooms

As the warmer months approach, incorporating fresh and vibrant vegetables into meals becomes not just appealing but also an exciting way to celebrate the season. One dish that effortlessly bridges the gap between simplicity and flavor is Garlic Sauteed Asparagus and Mushrooms. This recipe pairs the earthy tones of mushrooms with the crisp, green snap of asparagus, all brought together with a garlicky, slightly spicy kick. It’s perfect as a side dish for a family dinner or as a healthy addition to your springtime barbecue.

Ingredients:

  • 1 lb asparagus – Fresh, with the woody part trimmed.
  • 4 oz mushrooms – Button mushrooms are recommended, but feel free to use any variety.
  • 1 tablespoon garlic paste – For that irresistible, aromatic flavor.
  • 1 tablespoon olive oil – To sauté and bring out the flavors.
  • Cilantro – Freshly chopped for garnishing.
  • ½ teaspoon red chili flakes – Adds a subtle heat that complements the garlic.

Directions:

  1. Prepare the Asparagus:
    • Begin by washing the asparagus thoroughly to remove any grit. Dry them with a towel.
    • Trim about 2 inches off the woody bottom ends of the asparagus stalks, which are usually tough and fibrous.
    • Cut the asparagus into manageable pieces, roughly 2-3 inches long, ideal for bite-sized enjoyment.
  2. Prepare the Mushrooms:
    • Select firm mushrooms and remove the stems. You can choose to peel them if preferred, which can help in removing any residual dirt.
    • Slice the mushrooms evenly to ensure they cook uniformly.
    • After slicing, give them a quick wash and pat them dry to remove excess moisture.
  3. Saute and Season:
    • Heat a nonstick or cast-iron skillet over medium heat.
    • Place the mushrooms in the skillet in a single layer. Let them cook undisturbed for about 2 minutes, then flip and continue cooking for another 2 minutes until they begin to brown.
    • Add the asparagus to the skillet and stir fry together for about 1 minute.
    • Mix in the garlic paste, olive oil, and red chili flakes, combining them well with the vegetables.
    • Continue to cook for another 5-6 minutes, stirring occasionally. The goal is to cook until the asparagus is tender but still has a crispness to it.
  4. Garnish and Serve:
    • Once cooked, take the skillet off the heat.
    • Sprinkle freshly chopped cilantro over the hot vegetables for a burst of color and freshness.
    • Serve immediately to enjoy the dish at its best, ideally alongside your favorite main.
