Ingredients

  • 1 tbsp. extra-virgin olive oil
  • 4 (4-oz.) fillets salmon (preferably wild)
  • 2 tsp. Cajun seasoning, divided
  • Freshly ground black pepper
  • 2 tbsp. butter
  • 3 cloves garlic, minced
  • 1/3 c. low-sodium chicken or vegetable broth
  • Juice of 1 lemon
  • 1 tbsp. honey
  • 1 tbsp. freshly chopped parsley, plus more for garnish
  • 2 tbsp. freshly grated Parmesan
  • Lemon slices, for serving

Directions

  1. Prepare the Skillet:
    • Heat olive oil in a large skillet over medium-high heat.
  2. Cook the Salmon:
    • Season the salmon fillets with 1 teaspoon of the Cajun seasoning and a sprinkle of black pepper. Place them in the skillet, skin-side up.
    • Cook for about 6 minutes until the underside is deeply golden. Flip the fillets and cook for an additional 2 minutes. Remove from the skillet and set aside on a plate.
  3. Create the Sauce:
    • In the same skillet, add butter and minced garlic. Allow the butter to melt and the garlic to become fragrant.
    • Stir in the chicken or vegetable broth, lemon juice, honey, the remaining teaspoon of Cajun seasoning, chopped parsley, and grated Parmesan cheese.
    • Bring the mixture to a simmer.
  4. Finish the Dish:
    • Reduce the heat to medium and return the salmon to the skillet. Let it simmer in the sauce for 3 to 4 minutes, or until the salmon is thoroughly cooked and the sauce has reduced slightly.
    • Add lemon slices to the skillet for an extra zing of freshness.
  5. Serve:
    • Plate the salmon and spoon over the delicious sauce. Garnish with additional chopped parsley and serve hot.
