4 catfish, cut into bite-sized pieces
2 cups cornmeal
1 ½ cups flour
3 tbsp mustard
1 tbsp seasoning salt (to your liking)
1 tsp black pepper
1 tbsp garlic powder
1 tbsp paprika
3 cups vegetable oil (enough to fry)
Tartar sauce (optional, for dipping)
Hot sauce (optional)
Flour Seasoning:

Instructions
Clean your fish.
Preheat your oil to 350°F (175°C).
Cut your catfish into bite-sized pieces and place into a bowl.
Drizzle mustard over your catfish.
Season your catfish nuggets with the seasoning salt, black pepper, garlic powder, and paprika. Mix well.
In a separate bowl, add the cornmeal, flour, and seasonings. Mix well.
Coat the catfish thoroughly with the cornmeal mixture.
Add the catfish to the oil, making sure not to overcrowd the pan.
Cook until golden brown.
Place on a cooling rack for 5 minutes.
