  • Egg yolks, at room temperature: 2
  • Buttermilk or full-fat milk, preferably organic, at room temperature: ¾ cup (173g)
  • Natural granulated sugar: ½ cup (100g) + 4 TBSP for cream cheese (50g)
  • Instant yeast: 1 packet (11g, 3 ½ Tsp)
  • Salted butter, preferably organic European style, cubed and softened: 8 TBSP (113.5g) + 4 TBSP for guava (57g)
  • Guava paste, cut into small chunks: 12 to 14 oz
  • Cream cheese, softened: 4oz (114g)
  • Extra butter for brushing on baked Mallorcas: 3 TBSP (about 36g)
  • Confectioner’s sugar: 1 cup (120g)

Directions:

Making the Dough:

  1. Combine Flours: In a medium bowl, whisk together the all-purpose flour and bread flour.
  2. Prepare Flour-Water Mixture: Heat the water and 3 tablespoons of the flour mixture for about 15 seconds in the microwave. Stir and repeat briefly until it reaches a pudding-like consistency. Allow to cool completely.
  3. Add Salt: Mix the salt into the flour mixture.
  4. Mix Ingredients: In a stand mixer fitted with a paddle attachment, mix the eggs, egg yolks, buttermilk, sugar, yeast, and the cooled flour-water mixture on medium speed until well blended.
  5. Incorporate Flour: Gradually add the flour mixture at the slowest speed. Switch to a dough hook and knead until smooth.
  6. Add Butter: Incorporate the softened butter incrementally, then knead on medium speed for 20 minutes.
  7. First Rise: Let the dough rise in an oiled bowl, covered, for 1 ½ hours.

Making the Filling:

  1. Prepare Guava Paste: Cook the guava paste with water until smooth, then blend in butter. Let it cool.
  2. Mix Cream Cheese: Blend the cream cheese with sugar until smooth.

Assembling the Buns:

  1. Preheat Oven: Preheat the oven to 400°F. Once the buns are ready to bake, reduce the temperature to 350°F.
