Creamy Corn Comfort Soup

  • 2 cups unsweetened oat milk or whole milk
  • 2 tablespoons unsalted butter

Directions:

  3. In the same saucepan, melt the butter over medium-high heat, then add the reserved corn and cook until it starts to pop, about 1 minute.
  4. Pour the blended mixture back into the pan, season with salt, and simmer until thickened, 2-3 minutes.
  5. Taste and adjust seasoning. Serve hot, garnished with black pepper and chives, if using.
