Delightful Italian Apple Cake: A Classic Dessert with a Twist

Apple cakes have been a staple in Italian kitchens for generations, showcasing the versatility and sweet allure of apples. Today, I’m excited to share a recipe that celebrates the simplicity and comfort of traditional Italian baking: the Italian Apple Cake. This delightful cake marries the tartness of fresh apples with the sweet, buttery richness of a soft cake base, topped off with a caramelized sugar-butter glaze that will make your kitchen smell heavenly.

Ingredients:

  • Apples: 5 apples (2 lb or 1 kg), for that perfect balance of moisture and texture.
  • Lemon Juice: ½ lemon, juiced, to keep the apples from browning and add a zesty note.
  • Butter: ½ cup, room temperature, for the batter; an additional ¼ cup for the topping.
  • Caster Sugar: ½ cup for the batter and another ¼ cup for the topping, ensuring just the right level of sweetness.
  • Eggs: 2 fresh eggs to bind everything together beautifully.
  • Flour: 1 ½ cups (8.8 oz), a sturdy base for the cake.
  • Baking Powder: 4 teaspoons to ensure the cake rises perfectly.

Directions:

  1. Prepare the Oven and Pan:
    • Preheat your oven to 355°F (180°C).
    • Line a round baking tin with parchment paper and butter and flour the sides to prevent sticking.
  2. Prepare the Apples:
    • Peel and cut the apples into large chunks.
    • Toss them with the lemon juice to enhance their flavor and prevent discoloration.
  3. Make the Cake Batter:
    • In a mixing bowl, cream together ½ cup of butter with ½ cup of caster sugar until fluffy.
    • Beat in the eggs one at a time to incorporate air and structure.
    • In another bowl, whisk together the flour and baking powder.
    • Gradually mix the dry ingredients into the wet mixture until just combined.
  4. Assemble the Cake:
    • Pour the batter into the prepared baking tin, spreading it evenly.
    • Press the apple chunks into the batter, creating a pattern if desired.
  5. Prepare the Topping:
    • Melt the remaining ¼ cup of butter with ¼ cup of caster sugar.
    • Drizzle this mixture over the apples to create a luscious, caramelized top.
  6. Bake and Serve:
    • Bake the cake for about 1 hour or until a toothpick inserted into the center comes out clean.
    • Allow the cake to cool for 10 minutes in the pan, then transfer it to a serving dish.
