For the Sriracha Mayo:
¼ cup mayonnaise
½ tablespoon sriracha (or more to taste, up to 1 tablespoon)
½ teaspoon lemon juice
1 clove garlic, minced
Salt to taste
For the Fried Shrimp:
½ cup all-purpose flour
1 tablespoon Old Bay seasoning
2 large eggs, whisked
1 cup panko breadcrumbs
1 pound large uncooked shrimp, peeled and deveined


Instructions

Prepare Sriracha Mayo: In a small bowl, whisk together mayonnaise, sriracha, lemon juice, minced garlic, and salt. Adjust the spice level to your preference. Cover and refrigerate until ready to serve.
Prepare Shrimp for Frying: In a shallow bowl, combine flour and Old Bay seasoning. Set aside.
In a second shallow bowl, whisk the eggs until fully combined.
Add panko breadcrumbs to a third shallow bowl and set aside.
Preheat the air fryer to 400°F. Pat shrimp dry with paper towels.
Bread the Shrimp: Lightly coat each shrimp in the seasoned flour, shaking off any excess. Dip the shrimp into the whisked eggs, ensuring it’s fully coated. Let any excess egg drip off before transferring to the panko breadcrumbs. Press the breadcrumbs gently onto both sides of the shrimp to ensure they stick.
Spray the air fryer basket with cooking spray and place the breaded shrimp inside, ensuring they don’t overlap. Lightly spray the tops of the shrimp with cooking spray.
Cook Shrimp: Cook shrimp in the air fryer for 6 minutes. Check after 6 minutes; if needed, cook an additional 1-2 minutes until golden and fully cooked.
Remove shrimp from the air fryer and repeat with any remaining shrimp. Serve immediately with the prepared sriracha mayo.
