2 large boneless and skinless chicken breasts, sliced horizontally to make 4 fillets
1 tablespoon fresh oregano or parsley leaves (for garnish)
The Garlic Mayonnaise:
¼ cup mayonnaise
2 garlic cloves, minced
½ teaspoon onion powder
1 teaspoon Italian seasoning
½ teaspoon garlic powder (optional)
Salt to taste
The Parmesan Coating:
1 cup fresh grated parmesan cheese
½ cup panko breadcrumbs


Instructions

Preheat your air fryer to 390°F (199°C).
Slice each chicken breast in half horizontally to create 4 fillets. Place the chicken fillets on a cutting board, cover with plastic wrap, and pound them into an even thickness using a rolling pin or meat tenderizer.
In a small bowl, mix together the mayonnaise, minced garlic, onion powder, Italian seasoning, garlic powder, and salt. Divide the mixture evenly among the fillets and spread it all over the chicken.
In a shallow bowl, combine the panko breadcrumbs and grated parmesan cheese. Dredge each fillet in the parmesan mixture, pressing lightly to ensure the coating adheres. Turn the fillets to coat both sides, shaking off any excess coating.
Place the coated chicken fillets in the air fryer basket. Cook for 10-12 minutes or until the chicken is golden brown and the internal temperature reaches 165°F (74°C). After 5-6 minutes of cooking, carefully flip the chicken using tongs to ensure even browning.
Once cooked, garnish with fresh oregano or parsley leaves. Serve immediately and enjoy!
