For the Salmon Patties:
12 oz fresh salmon (see notes on using canned salmon)
1 large egg
⅓ cup breadcrumbs (gluten-free option available)
2 tablespoons avocado mayo
1 tablespoon dijon mustard
1 tablespoon lemon juice
1 tablespoon fresh chopped dill
½ teaspoon kosher salt
¼ teaspoon ground black pepper
Olive oil spray
For Serving:
Apple Fennel Slaw


Instructions

Prep the salmon: Ensure the skin is removed. You can do this yourself or ask to have it removed when purchasing. Cut the salmon into chunks, then pulse in a food processor until it reaches a coarse ground meat texture.
Make the patty mixture: In a large bowl, combine the salmon with all other patty ingredients until a thick, slightly wet mixture forms.
Form the patties: Using a ½ cup measuring cup, scoop the mixture and form into ½-3/4 inch thick round patties. Repeat to make four patties.
Cook: Preheat the air fryer to 390 degrees F. Spray the air fryer basket with olive oil spray and place the patties inside, spaced apart. Spray the patties with additional olive oil. Cook for 8 minutes, flipping and spraying halfway through.
Serve: Place a bed of Apple Fennel Slaw on each plate, top with a salmon patty. Garnish with Greek yogurt, a squeeze of lemon, chopped dill, and a sprinkle of kosher salt.
