For the Cauliflower:
1 medium head cauliflower, cut into florets
⅔ cup gluten-free all-purpose flour or regular AP flour
⅔ cup plain non-dairy milk (such as almond milk)
½ teaspoon garlic powder
¼ teaspoon salt
¾ cup gluten-free breadcrumbs
For the Spicy Sesame Sauce:
1 tablespoon oil
5 cloves garlic, minced
1 teaspoon fresh grated ginger
⅓ cup low sodium soy sauce or tamari
¼ cup honey or maple syrup
2 tablespoons water or vegetable broth
1 tablespoon toasted sesame oil
1 tablespoon rice vinegar
2 tablespoons gochujang
12 teaspoons sriracha (optional for extra heat)
1 teaspoon cornstarch mixed with 1 teaspoon water


Instructions

Cut the cauliflower into medium-sized florets and set aside.
In a large bowl, whisk together the flour, non-dairy milk, garlic powder, and salt to make the batter. Toss the cauliflower in the batter until fully coated, then mix in the breadcrumbs until evenly coated.
Preheat the air fryer to 370°F (188°C).
Place half of the cauliflower in the air fryer basket in a single layer. Fry for 10-13 minutes, shaking halfway through, until crispy. Repeat with the remaining cauliflower.
Meanwhile, in a small saucepan, heat the oil over medium heat. Add the garlic and sauté until lightly golden. Add the ginger and cook for an additional minute.
Add the soy sauce, honey, water, sesame oil, rice vinegar, gochujang, and sriracha to the saucepan. Stir well to combine.
In a separate small dish, whisk together the cornstarch and water, then pour into the saucepan. Bring the mixture to a low boil, stirring constantly until the sauce thickens. Remove from heat.
Once the cauliflower wings are done, toss them in the sauce until well coated. Sprinkle with sesame seeds and chopped scallions to serve.
