Imagine starting your day with a warm, golden croissant filled with a rich, almond-infused frangipane. Our Almond Bliss Croissants offer a delightful twist on the classic French pastry, featuring a sweet and nutty filling enveloped by a crisp, buttery exterior.


Ingredients

4 large shop-bought croissants, either fresh or a day or two old
Glaze:
120 ml (1/2 cup) water
1 tbsp golden caster sugar or superfine sugar
1 tsp vanilla extract
Frangipane:
90 g (3/4 cup) ground almonds
60 g (4 tbsp) soft unsalted butter
100 g (1/2 cup) golden caster sugar or superfine sugar
Pinch of salt
1 small egg
½ tsp almond extract
Also:
4 tbsp flaked almonds
1 tbsp confectioners’ sugar


Instructions

Preheat the oven to 175C/350F (fan).
Make a slit lengthways in each croissant along the outer side.
Prepare the glaze: In a small pan, combine water, sugar, and vanilla extract. Bring to a boil and bubble for a minute or two until the sugar dissolves, then turn off the heat and let it cool slightly.
Prepare the frangipane: In a bowl, mix ground almonds, soft butter, and sugar with a wooden spoon. Add salt, egg, and almond extract and mix until combined.
Dip each croissant in the glaze, letting the excess drip off.
Place the croissants on a baking tray. Spoon half the frangipane mixture inside the croissants and spread the rest on top.
Sprinkle flaked almonds over the croissants.
Bake for 12-14 minutes until the top is golden brown and crisp.
Remove from the oven, cool slightly, then sprinkle with confectioners’ sugar and serve.
