1 cup finely ground almond flour, packed
3 tablespoons ghee, softened butter, or vegan butter (such as Earth Balance)
3 tablespoons maple syrup
1/2 teaspoon vanilla extract
1/4 teaspoon salt
3 tablespoons jam, homemade or store-bought


Instructions

Preheat the oven to 350°F (177°C).
Line a baking sheet with parchment paper or use an ungreased baking stone.
In a small bowl, mix the almond flour, softened butter, maple syrup, vanilla extract, and salt until a cohesive dough forms. The dough may seem dry initially but will become more cohesive as you mix.
Scoop the dough using a tablespoon and roll each scoop into a ball. Place the balls on the prepared baking sheet, pressing your thumb into the center of each to create an indentation. Fill each indentation with 1/2-1 teaspoon of jam.
Bake the cookies for 10-12 minutes, or until the bottoms start to turn golden brown.
Remove the cookies from the oven, allow them to cool on the pan for 10 minutes, then transfer them to a cooling rack to cool completely before serving.
