Ingredients
Scale
- 2 1/8 cups (10 1/2 ounces) all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 12 tablespoons butter (1 1/2 sticks), melted and cooled slightly
- 1 cup (7 ounces) light brown sugar
- 1/2 cup (3 1/2 ounces) granulated sugar
- 1 large egg
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 cup shredded coconut, divided
- 1 1/2 cups chocolate chips
Instructions
- Prepare Baking Pan and Oven Preheat the oven to 325 degrees Fahrenheit and adjust the oven rack to the lower-middle position. Line a 9×13-inch baking pan with foil, then spray with nonstick cooking spray.
- Mixing Dry Ingredients In a medium bowl, combine the all-purpose flour, salt, and baking soda. Set aside for later use.
- Combining Wet Ingredients In a large bowl, whisk together melted butter, light brown sugar, and granulated sugar until well mixed. Add in the egg, egg yolk, vanilla extract, and almond extract, stirring until thoroughly blended.
- Combining Ingredients Gently fold the dry ingredients into the wet mixture using a rubber spatula, ensuring they are just combined and avoiding overmixing. Fold in 3/4 cup of the shredded coconut and the chocolate chips.
- Baking the Mixture Transfer the batter to the prepared baking pan, smoothing the top with the spatula. Sprinkle the remaining coconut over the top. Bake in the preheated oven for about 24-28 minutes. The top should be light golden brown and slightly firm to the touch, with the edges beginning to pull away from the sides of the pan.
- Cooling Remove the pan from the oven and allow the bars to cool to room temperature on a wire rack before slicing into 2-inch squares.
