3 packets (or ¾ oz) unflavored gelatin (e.g., Knox)
2 Tbsp instant coffee granules
4 cups unsweetened almond milk
Liquid stevia to taste


Instructions

In a microwave-safe glass bowl or extra-large measuring cup, dissolve the gelatin in ½ cup of almond milk. Let sit for 5 minutes to soften.
Add the instant coffee granules to the almond milk-gelatin mixture. Whisk together (the coffee does not need to fully dissolve at this stage).
Microwave the mixture for 90 seconds until it is hot but not boiling, ensuring the coffee granules are completely dissolved.
Stir in the remaining cold almond milk (3 cups for firmer jello, 4 cups for softer jello).
Sweeten with liquid stevia to taste (approximately 1 tsp recommended).
Whisk thoroughly to combine everything evenly.
Pour the mixture into a glass Pyrex pan or ladle into individual ramekins. Tip: Use a ladle to prevent spills.
Allow to cool slightly, then refrigerate overnight or for at least 5 hours to allow the gelatin to set fully.
