1 ¼ cups sugar
2 tablespoons lemon juice
2 tablespoons ground cinnamon


Instructions

In a large 4-quart or larger saucepan, stir together the pumpkin purée, sugar, lemon juice, and cinnamon.
Heat the mixture over low to medium-low heat, stirring occasionally.
Continue cooking the pumpkin butter until it thickens and develops a deep brown color, which may take 1-2 hours. Stir frequently to prevent sticking or burning.
Once the pumpkin butter has thickened, carefully ladle it into clean jars. Seal the jars and let them cool. Store in the refrigerator or process in a water bath for long-term storage.
