  • ground black pepper
  • 2 oz brie, sliced (about ¼ inch thick)
  • 1 large apple (honeycrisp, granny smith, etc.), thinly sliced (about ¼ inch thick)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 small onion, thinly sliced
  • ¼ cup dry white wine
  • 1 tablespoon all-purpose flour
  • ¾ cup chicken broth
  • 1 tablespoon maple syrup
  • 2 teaspoons cider vinegar
  • 1 teaspoon whole grain or Dijon mustard
  • 2 sprigs fresh rosemary

Instructions

  1. Step 1: Prepare the Chicken Pat the chicken dry and carefully slice horizontally into each tenderloin to create a pocket, making sure not to slice all the way through. Season the inside and outside of the chicken with salt and pepper.
  2. Step 2: Stuff the Chicken Place slices of brie and 3-4 slices of apple into each pocket. Optionally, secure the stuffing with toothpicks.
  3. Step 3: Sear the Chicken In a large skillet, heat the olive oil and butter on medium-high. Add the stuffed chicken, searing until browned on both sides, about 2 minutes per side. Remove the chicken and cover to keep warm.
  4. Step 4: Cook the Onions and Apples Reduce the heat to medium, add onions to the skillet, and cook until softened, about 2-3 minutes. Add the remaining apple slices, season with a pinch of salt, and cook until lightly browned, about 2 minutes more.
  5. Step 5: Deglaze the Pan Pour the wine into the skillet, scraping up any browned bits. Allow the wine to reduce by half.
  6. Step 6: Make the Sauce Sprinkle flour over the mixture, stirring well. Add chicken broth, maple syrup, cider vinegar, mustard, and add the rosemary sprigs. Bring to a boil then reduce to a simmer for 5 minutes, adjusting the seasoning as needed.
  7. Step 7: Finish Cooking Return the chicken to the skillet, cover, and simmer until the chicken is fully cooked, about 8-10 minutes. Remove the rosemary before serving.
