Description

These Apple, Cheddar & Chicken Melts are a delightful blend of flavors and textures. The shredded chicken adds hearty protein, while the sharp cheddar cheese melts perfectly over the crispy sourdough. The fresh apple and Brussels sprouts slaw provides a refreshing crunch and a hint of sweetness, beautifully balanced by the tangy honey mustard and zesty lemon juice.

8 slices sourdough bread (1/2-inch-thick, from a 9-inch round boule)
4 tablespoons unsalted butter, softened
4 teaspoons honey mustard
2 ½ cups shredded, cooked chicken
1 ½ cups grated cheddar cheese
1 small Gala apple, cored and cut into matchsticks
4 ounces Brussels sprouts (about 5), finely shredded
1 tablespoon lemon juice
Kosher salt, to taste
Freshly ground black pepper, to taste


Instructions

Preheat your oven to 450°F (230°C) and place a baking sheet on the middle rack to heat.
Spread softened butter on one side of each slice of sourdough bread. On the opposite side of 4 slices, spread honey mustard.
Carefully remove the heated baking sheet from the oven using oven mitts. Place all the bread slices, butter-side down, on the baking sheet.
Evenly distribute the shredded chicken on the honey mustard-spread slices of bread. Distribute the grated cheddar cheese on the remaining 4 slices of bread.
Return the baking sheet to the oven and bake for about 10 minutes, or until the cheese is melted and bubbling.
While the bread is baking, prepare the slaw by combining the apple matchsticks, shredded Brussels sprouts, and lemon juice in a small bowl. Season with salt and pepper to taste.
Once the bread is ready, remove it from the oven. Place the chicken-topped bread slices on a cutting board and top with the apple and Brussels sprouts slaw.
Close each sandwich by placing the cheese-topped bread slices (cheese side down) on top of the slaw-covered slices. Cut each sandwich in half and serve immediately.
