Brioche Dough:
400 grams all-purpose flour (T45)
20 grams fresh yeast
60 grams salted butter
60 grams cane sugar
150 ml semi-skimmed or whole milk
1 egg
Apples:
6 Golden apples (about 1kg)
A knob of butter

1 tablespoon cane sugar
1 tablespoon honey or maple syrup
Filling:
80 grams salted butter, softened
60 grams cane sugar
1 to 2 tablespoons cinnamon (to taste)
1 egg for brushing


Instructions

Combine all brioche dough ingredients in a mixer and knead on low speed for about 15-20 minutes until the dough forms a ball and pulls away from the sides of the bowl.
Cover the bowl with a towel or plastic wrap and let rise in a warm place (about 28°C), like a slightly humid bathroom or an oven with a proofing setting, until doubled in size, approximately 1.5 hours.
Peel and dice the apples. Cook in a medium-high heat skillet with butter, sugar, and honey until soft, about 15 minutes, then let cool completely.
After the dough has risen, punch it down and roll it out into a 25×40 cm rectangle.
For the filling, whisk the soft butter with sugar and cinnamon, spread over the dough, then evenly distribute the cooled apple pieces.
Roll the dough tightly into a log and slice into rolls about 5 cm thick.
Place the rolls in a lightly buttered dish, spacing them apart. Allow to rise again in a warm place for about 30 minutes.
Brush the rolls with beaten egg and bake at 160°C in a conventional oven for about 25 minutes.
