  • 8 tablespoons unsalted butter (1 stick), melted and still warm
  • 1 3/4 cups cake flour (7 ounces)
  • 1 fuji apple, diced
  • 2 teaspoons cinnamon
  • 3/4 cup regular oats
  • 1 1/4 cups cake flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon table salt
  • 6 tablespoons unsalted butter, ¾ stick, cut into small pieces, softened
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 1/3 cup buttermilk
  • 1 fuji apple, diced
  • 2 teaspoons cinnamon
  • 2 tablespoons brown sugar

Instructions

  1. Mix sugar, dark brown sugar, ground cinnamon, table salt, and melted butter in a bowl. Whisk until combined, then add cake flour and mix until it forms a dough ball. In a separate bowl, toss diced apple with cinnamon and oats, and set aside.
  2. Preheat your oven to 325 degrees. Grease a cake pan with baking spray or butter and flour. In a stand mixer, blend the cake flour, granulated sugar, baking soda, and table salt. Gradually add butter and mix until crumbly. Add the egg, egg yolk, vanilla extract, buttermilk, diced apple, cinnamon, and brown sugar. Mix until fluffy.
  3. Spread the batter evenly in the prepared pan. Break the crumb topping into chunks and distribute over the batter. Spoon the apple-oat mixture over the crumb topping. Bake for 50-55 minutes, or until a knife inserted comes out clean.
