- 1/2 cup old-fashioned oats
- 1/2 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 cup unsalted butter, cold and cubed
Instructions
- Prepare the Crust: In a bowl, mix graham cracker crumbs with 5 tablespoons of melted butter and 1/4 cup granulated sugar. Press evenly into the bottom of a 9-inch springform pan.
- Cook the Apples: In a skillet over medium heat, melt 2 tablespoons of butter. Add apples, 1/2 cup brown sugar, 1 teaspoon cinnamon, and nutmeg. Cook until apples are softened, approximately 5-7 minutes, then set aside to cool.
- Make the Cheesecake Filling: Using a large bowl, beat the cream cheese with 1 cup granulated sugar and vanilla extract until smooth. Incorporate eggs one at a time, beating just until blended after each addition.
- Assemble the Cheesecake: Pour half of the cheesecake filling over the crust. Layer half of the cooked apple mixture on top, then repeat with remaining filling and apples.
- Prepare the Topping: Combine flour, oats, 1/2 cup brown sugar, and 1/2 teaspoon cinnamon in a separate bowl. Cut in 1/4 cup cold, cubed butter until the mixture is crumbly. Sprinkle this topping over the assembled cheesecake.
