  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3 packages (24 oz) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 3/4 cup all-purpose flour
  • 1/2 cup old-fashioned oats
  • 1/2 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, cold and cubed

Instructions

  1. Prepare the Crust: In a bowl, mix graham cracker crumbs with 5 tablespoons of melted butter and 1/4 cup granulated sugar. Press evenly into the bottom of a 9-inch springform pan.
  2. Cook the Apples: In a skillet over medium heat, melt 2 tablespoons of butter. Add apples, 1/2 cup brown sugar, 1 teaspoon cinnamon, and nutmeg. Cook until apples are softened, approximately 5-7 minutes, then set aside to cool.
  3. Make the Cheesecake Filling: Using a large bowl, beat the cream cheese with 1 cup granulated sugar and vanilla extract until smooth. Incorporate eggs one at a time, beating just until blended after each addition.
  4. Assemble the Cheesecake: Pour half of the cheesecake filling over the crust. Layer half of the cooked apple mixture on top, then repeat with remaining filling and apples.
  5. Prepare the Topping: Combine flour, oats, 1/2 cup brown sugar, and 1/2 teaspoon cinnamon in a separate bowl. Cut in 1/4 cup cold, cubed butter until the mixture is crumbly. Sprinkle this topping over the assembled cheesecake.
  6. Bake: Place in a preheated oven at 350°F (175°C) and bake for 50-60 minutes, until the center is set but still slightly jiggly. Allow to cool completely in the pan on a wire rack.
