  • 1/3 cup (79mL) almond milk (or other plant-based milk)
  • 1 tsp vanilla extract
  • 2 large eggs
  • 2/3 cup (125g) unsweetened applesauce
  • 1/2 cup (125g) petite diced apple (Fuji or Gala)

Topping (Optional):

  • 3 Tbsp white granulated sugar
  • 1/2 tsp ground cinnamon

Directions

  1. Preparation:
    • Preheat your oven to 425°F (218°C).
    • Grease a 12-count muffin pan with non-stick spray or line with paper liners.
  2. Mix the Dry Ingredients:
    • In a small bowl, whisk together both types of flour, baking soda, baking powder, salt, and spices.
  3. Combine the Wet Ingredients:
    • In a large bowl, use a hand mixer to blend the sugar, oil, milk, vanilla extract, eggs, and applesauce until smooth.
  4. Combine Wet and Dry Ingredients:

Instructions

In a small bowl, whisk together the flours, baking soda, baking powder, salt, and spices; set aside.
In a large bowl, use a hand mixer to beat together the sugar, oil, milk, vanilla extract, eggs, and applesauce. Beat in the dry ingredients until combined.
Add the diced apple and gently mix with a large spoon or spatula until just combined.
Scoop or spoon the batter into your prepared muffin wells, filling to the top. Sprinkle the cinnamon sugar mixture onto the muffin batter, making sure to add a bit of extra to the centers.
Bake muffins at 425°F for 5 minutes. Reduce the oven temperature to 375°F (without opening the oven door) and continue baking for 8-10 minutes or until a toothpick inserted into a muffin comes out clean.
Allow muffins to cool in the pan for 5 minutes. Carefully run a butter knife around the edge of each muffin, gently lifting them up and out of the muffin pan. Place each muffin on a cooling rack.
