Muffin Batter:

3/4 cup (90g) whole wheat pastry flour
3/4 cup (98g) unbleached all-purpose flour
1/2 tsp baking soda
1 tsp baking powder
1/4 tsp salt
2 tsp ground cinnamon
3/4 tsp ground nutmeg
1/4 tsp ground allspice
1/2 cup (100g) white granulated sugar
1/3 cup (79mL) olive oil (or other baking oil)
1/3 cup (79mL) almond milk (or other plant-based milk)
1 tsp vanilla extract
2 large eggs
2/3 cup (125g) unsweetened applesauce
1/2 cup (125g) petite diced apple (Fuji or Gala)
Topping (Optional):

3 Tbsp white granulated sugar
1/2 tsp ground cinnamon


Instructions

Preheat your oven to 425°F and prepare a 12-count muffin pan with non-stick spray or paper liners. This recipe makes 10 or 11 muffins (depending on your muffin pan).
In a small bowl, whisk together the flours, baking soda, baking powder, salt, and spices; set aside.
In a large bowl, use a hand mixer to beat together the sugar, oil, milk, vanilla extract, eggs, and applesauce. Beat in the dry ingredients until combined.
Add the diced apple and gently mix with a large spoon or spatula until just combined.
Scoop or spoon the batter into your prepared muffin wells, filling to the top. Sprinkle the cinnamon sugar mixture onto the muffin batter, making sure to add a bit of extra to the centers.
Bake muffins at 425°F for 5 minutes. Reduce the oven temperature to 375°F (without opening the oven door) and continue baking for 8-10 minutes or until a toothpick inserted into a muffin comes out clean.
Allow muffins to cool in the pan for 5 minutes. Carefully run a butter knife around the edge of each muffin, gently lifting them up and out of the muffin pan. Place each muffin on a cooling rack.
Enjoy muffins warm or allow to cool. Before storing any leftover muffins, allow them to cool completely. Leftovers can be stored at room temperature in an airtight container.
