For the Apple Compote:
1 tablespoon butter or vegan butter substitute
1 large apple, peeled, cored, and diced
1/2 teaspoon ground cinnamon
2 tablespoons maple syrup
1 tablespoon water
1 teaspoon corn starch


Instructions

Prepare the Oats: In a medium-sized bowl, combine the oats, almond milk, maple syrup, chia seeds, vanilla extract, cinnamon, and salt. Stir well to combine. Cover the bowl and refrigerate overnight, allowing the oats to soften and the flavors to meld together.
Make the Apple Compote: In a medium saucepan, melt the butter over medium heat. Add the diced apples, cinnamon, and maple syrup, stirring occasionally for 3-5 minutes until the apples become tender.
Thicken the Compote: In a small bowl, whisk together the water and corn starch. Pour the mixture into the saucepan with the apples, stirring for an additional 1-2 minutes until the compote thickens. Remove from heat and let cool completely.
