1 tablespoon coconut oil, melted
1/2 cup oats, ground

1/3 teaspoon nutmeg
1/2 teaspoon baking soda
1/2 teaspoon vanilla extract
1 tablespoon yogurt
1 tablespoon chopped walnuts or almonds

Instructions

Prepare the Pancake Batter:
Slice the apple and blend it with the egg, honey, and melted coconut oil in a blender or using a hand blender until smooth.
Add in the ground oats, cinnamon, nutmeg, baking soda, and vanilla. Blend again until well combined.
Stir in the chopped nuts without blending.
Cook the Pancakes:
Heat a non-stick pan over medium to medium-high heat and coat the surface with coconut oil.
Pour spoonfuls of the batter into the pan to form small, palm-sized pancakes (about 3-4 pancakes per batch).
Cook until bubbles appear on the surface and the pancakes are no longer liquid (about 1 minute). Flip the pancakes and cook for another 30 seconds to 1 minute until golden brown.
Remove the pancakes from the pan and repeat with the remaining batter.
