Description

This Apple Slaw with Cranberries is a delightful twist on the classic coleslaw. The combination of crisp apples, shredded cabbage, and crunchy almonds creates a perfect balance of textures, while the sweet-tart cranberries add a burst of flavor. The creamy Greek yogurt dressing, lightly sweetened with honey and balanced with the tang of apple cider vinegar, ties everything together beautifully.

Ingredients

Scale

For Apple Slaw Mix:
2 red and firm apples
2 cups cabbage, shredded
1 cup carrot, shredded
⅓ cup celery, thinly sliced
⅓ cup dried cranberries
⅓ cup sliced almonds
For Slaw Dressing:
½ cup Greek yogurt
¼ cup mayo
1 tablespoon apple cider vinegar
2 tablespoons honey
1 teaspoon Dijon mustard
Salt to taste
Freshly ground black pepper to taste

Instructions

To make the coleslaw dressing, mix all the dressing ingredients in a jar or a bowl. Stir well until fully incorporated. Set aside.
In a large salad bowl, combine all the ingredients for the slaw. Pour the dressing over the slaw mix.
Toss everything together until well coated. Serve as a side dish and enjoy!
