Ingredients

1/2 cup applesauce
1/2 cup water
3 tbsp oil or additional applesauce
2 tsp pure vanilla extract
1 tbsp white or cider vinegar
1 1/2 cups white, spelt, or oat flour
1/3 cup sugar (unrefined if desired)
3/4 tsp salt
3/4 tsp baking powder
3/4 tsp baking soda
1/4 tsp cinnamon
Optional: 1/4 tsp allspice
Optional: 1/2 cup raisins, chopped walnuts, or shredded coconut


Instructions

Preheat the oven to 350°F (175°C).
Whisk the liquid ingredients together in a large bowl.
Add all the remaining ingredients to the bowl and mix until a smooth batter forms.
Pour the batter into a greased or lined 8-inch pan, smoothing the top evenly.
Bake on the oven’s center rack for 18 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool completely before frosting as desired. The flavor will develop and become even sweeter the next day!
