Ingredients
For the Salad:
3 cups thinly sliced Napa cabbage
1 cup thinly sliced red cabbage
1 cup shredded carrots
1 cup thinly sliced sugar snap peas
3 green onions, thinly sliced
3 cups cooked, shredded chicken
1 cup mandarin orange segments, drained
1 cup chopped fresh cilantro leaves
⅓ cup toasted slivered almonds
Optional: sesame seeds for garnish
For the Dressing:
¼ cup unseasoned rice vinegar
3 tablespoons toasted sesame oil
3 tablespoons coconut aminos
2 tablespoons avocado oil
½ teaspoon ground ginger
¼ teaspoon garlic powder
Instructions
In a large bowl, combine all salad ingredients except for oranges, cilantro, and almonds.
In a separate bowl, whisk together all dressing ingredients until well combined.
Pour dressing over the salad and toss to coat evenly.
Just before serving, gently mix in the oranges, cilantro, and almonds.
